Hello, Im not a professional chef, so this experience wont be professional, but will be professionally managed. Everyone will take place to the preparation of the dishes from the scratch to the end. The aim of this experience is to spend some time in an umbrian country house cooking with me in an informal environment. After we'll consume all together the meal in a joyful conversation with a glass of wine per course. The day after you will receive the recipes file. We will prepare together 2 kinds of pasta and a dessert to pick from the list below. How ancient populations where capable to understand the quality also in those years . 2)Olive oils production in the world and explanation of cultivated varieties (Cultivars) 3)How olive oils are classified in accordance to International regulations 4)How to read the labels, try to avoid misleading advertising, get to know how to choose best quality products. 5)How to use EVOO while cooking and associated risks (smoke point temperature). 6) Specific session on EVOO tasting during which participants are taught the main principles on how to appreciate the qualities of a good Extra Virgin Olive Oil and how to use it in combination with gourmet or day to day food 7)Visit to a nearby olive grove with explanations of the various coulivars and cultivation technique 8)Visit to our proprietary modern oil mill to understand what are the various phases for processing olives with the aim to produce a vey High Standard Extra Virgin Olive Oil and comparison with old and now obsolete techniques. Orvieto by Evening, magic City by e-bike
We start with our e-bikes from Piazza del Duomo in Orvieto to reach Albornoz Fortress where we have a 15 minutes stage for admiring wonderful landscape on Monte Peglia, MAB Unesco reserve, and tell some word about Orvieto's history. Then we will get the "Ring" of Orvieto in order to have unforgottable views from different angles. We stop also come minutes just above "Etruscan Necropolis" where historians are still studying to better understand that fascinating civilization. After we go again inside the very center of Orvieto through "Roman Door", reaching a terrace from where you may take beautiful pictures on Orvieto and lands around. Again by e-bike we get S. Slow Food- Dalla Vigna alla Vinsantaia
Al vostro arrivo verrete accolti in azienda da Chiara che, durante una passeggiata che vi guiderà alle vigne, comincerà a parlarvi di come nasce questo prodotto, il Vinosanto da uve affumicate dell’Alta Valle del Tevere, Presidio Slow Food. Verrete avvolti dal verde delle campagne umbre, in una passeggiata che si snoderà fra tre diversi vigneti… Rientrando in azienda l'esperienza proseguirà nella Vinsantaia, luogo dove il tempo non esiste e la tradizione continua… qui, ogni anno, ad Ottobre le uve vengono appese con delle coppiole di cotone al soffitto e spremute a fine Febbraio. Giorni dopo, il mosto ricavato viene messo “a dimora” in caratelli di rovere dove ”incontra” la Madre, che rende il Vinosanto – prodotto da ogni famiglia - unico ed inconfondibile. Il mosto resterà nei caratelli per un minimo di 10 anni e, alla fine, si otterrà un nettare ambrato dal caratteristico sentore di affumicato. E la degustazione? Lasciatevi stupire da un insolito abbinamento: Vinosanto ed Erborinati! Guests will do a tutored tasting of the wines that are produced at Chiesa del Carmine. Wine and olive oil will be matched with our truffle products, homemade focaccia, local meat, cheese and vegetables from our garden. Please let us know if you have any dietary requirements and we will try to accomodate your needs. (I recommend that you should not eat before the tasting!) Walk maps of the valley can be provided upon request and visitors are welcome to stay after the tasting and enjoy a walk around the farm. We will begin our tasting itinerary with a visit to the 1300s cellar dug into the tuff. Here I will tell you a little about how this cave was used in the past. After the underground visit we will go back up and sit down at the tables overlooking the Duomo, if the weather does not allow it, the tasting will be inside, we will begin to taste typical Orvietana products such as roast pork, dried sausages and ham, and even cheeses with various maturations ; everything will be combined with the wines of our city, both white and red.
